Learn to Cook: Tortilla Soup with Homemade Tortillas

Join Katie, Registered Dietitian from Food Explorers to make vegetarian tortilla soup with homemade tortillas! This delicious and filling soup is full of flavor.

You’ll need the following ingredients:

1 cup flour 3-4 tbsp olive oil 1, 28oz can crushed/pureed tomatoes 1 can beans 1 onion 1 bell pepper 1 clove garlic (or pre-minced) 4 cups chicken or vegetable broth Optional: 1 Jalapeno, cilantro, avocado, lime, shredded mexican cheese, Cumin, corn *You will need a rolling pin

You’ll also have the opportunity to ask Katie any food or nutrition related questions you may have - participation is highly encouraged.

About the Presenter Katie Shepard is a Registered Dietitian and small business owner. After graduating from UCONN’s Coordinated Program in Dietetics and working at WIC and as a Retail Dietitian, Katie decided to combine her passions of nutrition and teaching kids and adults how to cook delicious and healthy foods.
